Pork Taco’s

INGREDIENTS
Pork:
- 1 tbs cumin
- 1 tbs salt
- 2 tbs ground coriander
- 2 tbs paprika
- 1 tsp oregano
- 1 tsp chilli flakes
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper
- 1 onion, fine diced
- 3 garlic cloves, crushed
- 1/4 cup brown sugar
- 400ml orange juice
- 1/2 tin crushed pineapple
- 1 tin of tomatoes
- 1/2 bunch of coriander
- 1.5kg pork scotch, big dice
Extras:
- Soft taco shells (stand and stuff)
- 1/4 of a cabbage
- 1 lime
- 500g corn
- 1/4 red onion
- 1/4 jar of roasted capsicum
- 1 sprig coriander
- 2 avocados
- 1 jar of salsa
- grated cheese

METHOD
1. In a large pot, brown of your big chunks of pork on a high heat.
2. Add in all ingredients from pork section and simmer for 2 hrs. Remember to stir every so often. Aim is to reduce the sauce by half. Take of the heat and let it sit.
3. Whilst the pork is cooking prepare your other condiments. For the guacamole, mash up both avocados until desired creaminess and squeeze in 1/4 of a lime.
4. For cabbage, slice cabbage into thin strips and squeeze 1/2 a lime over it.
5. For salsa, dice capsicum and red onion into tiny cubes, add to corn. Tear off a few leave of coriander and crush before adding in. Squeeze in 1/4 of a lime and stir through.
6. Heat your taco shells and put everything into bowls so people can make their own tacos.
