Salmon On A Bed Of Asian Greens

 

Ingredients:

- 3 Fillets of Salmon
- 1/2 Red onion, sliced
- 1 Clove of garlic, sliced thinly
- 1 Chilli, sliced thinly
- 1 tsp Ginger paste
- Broccoli, cut down to florets
- Snow peas
- 1/2 Zucchini, cut to 1/2cm matchsticks
- 2 Bok Choi, halved
- Corn flour
- Mint
- Coriander
- Salt
- Pepper
- Olive oil
- Soy sauce
- Honey
- Fish sauce
- Chinese cooking wine

Method:

• Heat up pan for salmon with a small amount of oil, and separate pan for veggies with a bit more oil. Prepare all veggies, cutting to size. Rub salt and pepper onto skin side of salmon.
• Combine Soy sauce, honey, fish sauce and chinese cooking wine to create sauce for veggies. Combine cornflour with equal parts water and mix well.
• Add onion and garlic to veggie pan. Keep moving around in the pan.
• 2 minutes later, add chilli and ginger to veggie pan. Put salmon into the other pan skin down.
• 1 minute later, throw broccoli into veggie pan, remembering to stir every 30 seconds or so.
• 2 minutes later, add the rest of the veggies to the pan.
• 3 minutes later, flip the salmon. Add sauce to the the veggie pan.
• 2 minutes later, add cornflour mixture to the veggie pan, making sure to mix through thoroughly and evenly. Take salmon off the pan and let it sit.
• 2 mins later, take veg off the heat.
• Layer plate with veg, little bit of mint and coriander, then place the salmon on top.
