Chicken Noodle Soup

Ingredients
(Serves 5)
• 3 litres chicken stock
• 4 chicken breast fillets
• 1 parsnip
• 2 carrots
• 1 celery, finely chopped
• 1 leek
• 1 can corn kernels
• spaghettini
• parsley
• 3 garlic cloves, finely chopped
• loaf of bread
• butter, for bread
Method
Poach chicken fillets in chicken stock until almost cooked and then remove. In a separate pot, put celery, leek and garlic, sweat for 10 minutes. Add all stock and bring to a boil. Add chopped carrots and parsnip. Break up spaghettini and add with corn and torn up chicken fillets. Garnish with parsley and serve with buttered bread.
