Prawns on the BBQ



(serves 5)
• 5 x king prawns (green)
• 5 x perch fillets
• 1 chilli
• 1 bunch chives
• butter
• lemon
• potatoes
• pear
• walnuts
• rocket
• truffle Salt
• orange juice
• red wine vinegar
• garlic
• whole egg mayonnaise
• salt & pepper

Peel and boil potatoes, once cooked but still firm remove and slice into 5mm-ish slices. Cut a square piece of foil and arrange 4-5 potato slices in the centre. Place perch fillet on top. Top with a teaspoon of butter some chopped chilli, lemon slice, chopped chives and a sprinkle of salt and pepper. Fold up all sides of the foil to encase the fillet. Place parcels on the BBQ and cook for approx 5-10mins. Smash up the walnuts, finely slice the pear, combine it all with the rocket. Drench in a mix of red wine vinegar, orange juice, olive oil, truffle salt and pepper. See aside and throw prawns on the BBQ with a squeeze of lemon and a drizzle of oil. For a nice dip add some super finely chopped garlic to a dollop of mayonnaise mixed with a dash of lemon juice.
