Hearty Minestrone Soup


(Serves 8 )
• 4 potatoes, chopped
• 3 large carrots, chopped
• 2 turnips, chopped
• 4 leeks, sliced
• 1 Savoy cabbage, shredded
• bunch of silverbeet, chopped
• two handfuls of flat leaf parsley
• olive oil, to drizzle
• salt and pepper, to taste
• block of grana padano (approx 250g)

Put the potatoes, carrots, turnip, leeks, celery and silverbeet into a pot, pour in 3 litres of water, add a pinch of salt and bring to the boil. Lower the heat and simmer for several hours, the long the better. Season with salt. Stir in parsley and oil and ladle soup in to bowl. Drop a handful of cheese over the top and serve with fresh pumpernickel or dense heavy loaf of bread and butter.
