Chorizo and White Beans



(Serves 5)
• 5 dried chorizo sausages
• 2 tbsp olive oil
• 6 ripe tomatoes, chopped
• 3 tins cannellini beans, drained
• Salt and pepper
• a handful of chopped parsley
• Extra virgin olive oil
• 6 slices white sourdough or crusty white bread
• clove garlic

Cut chorizos in half but leave them connected at the seam. In a pan, fry the chorizo in olive oil for a few minutes. In a separate pot cook tomatoes for a few minutes then add the beans. Season with a little salt and plenty of pepper and cook until hot. Stir in the chopped parsley, drizzle with a little extra virgin olive oil and set aside. Spoon the beans into a bowl. Place the chorizo atop the beans. Serve with rocket and shaved fennel salad and some lightly toasted crusty bread.
