Five Lentil Curry

(Serves 4)
• 200g mixed dhal (equal portions of red, split, mung, urad and pigeon lentils)
• 1.25 litres water
• 1 teaspoon salt
• 1 teaspoon chilli powder
• 1 teaspoon turmeric powder
• 2 tablespoons ghee or oil
• 1 teaspoon cumin seeds
• 2 tablespoons julienned ginger
• 60g diced ripe tomato
• 2 tablespoons chopped coriander leaves


Wash lentils and place in a pot together with the water, salt, chilli and turmeric powder. Boil and simmer until the lentils are soft. In a separate pan, heat ghee or oil and fry the cumin seeds until aromatic. Add the ginger strips and tomatoes and sauté until the tomatoes become soft. Transfer to the boiling dhal; add in the coriander and continue to simmer for another 2 minutes. Remove from heat and serve.
