Lemon Pepper Linguini

(serves 6)

• Fresh cracked pepper linguini
• juice of 1 1/2 lemon
• rind of one lemon
• 2 zucchini
• baby spinach
• olive oil
• salt & pepper


Cook the magic pasta in water. Fry pine nuts and set aside. Then fry garlic and add zucchini and lemon juice. Stir through pasta, then mix in the spinach. Serve on plate with pine nuts, olive oil and salt – pepper may not be necessary.
