Prawn Linguini with tomato and rocket


(Serves 6)
• Extra Virgin Olive Oil
• Garlic
• Onion
• 2 Small Hot Powerful Chilies
• Large nice prawns
• Fresh pasta, linguine is
• Rocket
• Cherry tomatoes
• 2 tins of crushed tomatoes
• 2 lemons


Dead simple this one. Boil the pasta. Whilst this is going on, chop up the onions, garlic add to a frying pan. Cook until the aroma of these two fellas have been up your nostrils for a minute or so. Add Prawns. Cook for another 2 minutes on a strong heat. Next add the chopped chili, cherry tomatoes, 2 tins of crushed tomatoes and squeeze a bit of the lemon goodness in there. Also at this stage, glug a healthy amount of extra virgin olive oil over the mix. Lightly but firmly season. Evenly. Cook for 2 minutes. Once the pasta is looking good, combine with the frying pan contents. Squeeze a little more lemon in there to taste, mix around for a bit. A little more extra virgin. Add rocket. Add to plate. Add to mouth.
