Chorizo Party Pasta
- Fresh linguini
- 1 spicy chorizo sausage
- 3 roasted & marinated peppers
- handfull of marinated garlic olives
- 6 sweet tomato’s
- olive oil
- cracked pepper
- creamy fetta
- pinch of sugar
Cook the pasta in water with a pinch of salt and a dash of olive oil.
Heat up pan, add peppers and heat through with oil and a pinch of sugar.
Take out 2 spoons of the juice and a slither of peppers, place in bowl and mash till smooth, place aside.
Put the tomato’s into pan and cook through, add the chopped peppers and chorizo.
Add diced olives and salt and pepper to taste, then simmer till pasta is cooked.
Place pasta into bowl, a few spoons of the sauce.
With a spoon drizzle the cold peppers sauce made earlier over the dish
Crumble some fetta on top. Serve!
