Chilli & Ginger Tofu

Ingredients

2 mugs of Rice
half a Cabbage
walnuts (small hand full)
thumbs worth of fresh ginger
1 and a half chillis
coriander
soy sauce
carrot
2 onions
2 brocholi
Generous dose of Tofu
4 eggs
4 cloves of garlic
Extra virgin olive oil.

Method

Boil water and add 2 mugs of rice. Whilst this is bubbling away, chop up all of the vegies. Dice the Tofu into small squares. In a well oiled frying pan, add the chopped chilli, ginger garlic and onions and fry until there is a healthy sizzle. Drape in a generous dollop of soy sauce and lay the squared tofu in the mixture being careful not to break the tofu up. fry the tofu on a low heat for 8 minutes. If the tofu soacks up all the soy sauce, go ahead and dollop some of more of that sweet sauce right in there. Once the rice is done, set to one side and drain. In a separate pot, oil her up and add the 4 eggs. Mix in the rice and vegies, mixing a little soy sauce as you go making th rice turn a healthy light shade of brown. remove the Tofu from the pan and set to one side. Drain the tofu sauce mix deep into your rice setup. Mix real good. Once the egg has begun to brown, take of the heat and dollop that stuff nicely onto the center of a plate. Lay a healthy amount the fried tofu ontop of the rice mix heap, and sprinkle a little of that coriander and walnut over the meal. drizzle a dollop of soy sauce until meal is a little saucier than it was before.
