Chorizo & Goats Cheese Fettucini


(serves 5)
• 3 chorizo sausages, cut into 15mm slices
• 1 packet goats feta
• 500g egg fettucini
• 1 packet baby spinach
• roasted peppers, cut in strips
• 2 garlic cloves, crushed
• button mushrooms, sliced
• olive oil
• flat parsley, roughly chopped
• salt, pepper

Heat oil in a pan. Add chorizo slices and cook until they have a crispy coating. Remove them and set aside. Start water boiling in a separate pot. Add garlic and mushrooms to the pan and fry on medium heat. After 5 minutes or so, add the peppers. Once water has boiled, add the pasta, and stir well so it doesn’t stick together. Put the chorizo back in the pan and keep everything warm until the pasta is done. Drain the pasta and put it back in the pot. Add the contents of the pan to the pot. Add spinach and stir till the spinach shrinks. Serve into bowls and crumble the goats feta, and sprinkle with parsley. Season to taste.
