Egg & Fresh Parsley Spaghetti with Zucchini Salad


  • 2 cloves Garlic
  • Bunch of Parsley
  • Spaghetti
  • Good Olive Oil
  • Parmesan
  • 6 Eggs

Ingredients for Zucchini Salad:

  • 1 clove garlic
  • 1 lemon
  • 4 Zucchini’s
  • Greek Fetta
  • Mint
  • Pinenuts

Method for Zuchini Salad:

Lightly toast some pine nuts on a hot pan and set aside. Crush garlic, add juice of half a lemon, olive oil, salt & pepper in a bowl -whisk together for dressing. Peel Zucchini’s into thin long ribbons add the dressing, fresh mint, pine nuts and mix together well adding crumbled fetta when just about to serve.

Method for Spaghetti:

While the pasta is cooking whip eggs in a dish, set aside. Crush garlic cloves and saute on hot pan. Add eggs to hot pan and scramble. Add a bit of fresh parsley, salt, pepper and a touch of parmesan to the eggs. When cooked through add to pasta with more fresh parsley and drizzle olive oil, serve with freshly grated parmesan.
