A Quasi-Mexican Fiesta with Leuuuzzi!

Ingredients (Serves 4 hungry people)

The Quasi-Mexican Beans

  • 1 can (400g) Kidney Beans
  • 1 can (400g) Diced Tomatoes
  • 1 Red Capsicum (coarsely chopped)
  • 1 Spanish Onion (chopped just as coarsely)
  • 1 Chorizo Sausage (chopped with just the right amount of coarse)
  • 2 heaped tablespoons of Sweet Paprika

The Salsa

  • 1/2 Spanish Onion
  • A few tomatoes
  • 1 Red Capsicum
  • 1/2 large Cucumber
  • 1/4 Red Chilli
  • A handful of Coriander
  • Juice of 1/2 a Lime

The Guacamole

  • A few smashed Avocado’s
  • Juice of 1/2 a Lime

The Rest -

  • Bag of Tasty Cheese
  • Bag of Corn Chips (the classy kind)
  • Packet of Flour Tortilla’s
  • Some Sliced Tomato
  • Some Cos Lettuce
  • Tub of Sour Cream
  • An appetite

Method :

Throw Onion, Capsicum and Chorizo in a large pot with a few tablespoons of olive oil over a high-heat.

Cook until the capsicum is, cooked. Add the Paprika and stir until everything is evenly coated. Then stir through Kidney Beans and diced Tomatoes. Bring mixture to the boil and then simmer on low heat to thicken. Take a deep breath in. Smells good, doesn’t it?

Chop all of the Salsa ingredients (except the lime) and combine in a large bowl. The fine-ness of the chopped ingredients should be determined by the amount of time one has to chop said ingredients. Finish with the lime juice. Easy.

The Guacamole is self explanatory, and delicious.

Evenly distribute the classy corn chips over the plates and sprinkle with cheese. Microwave for whatever is programmed as instant cook on the microwave you choose to use. Microwaves can be tricky. It’s okay.

Heap the Salsa, Guacamole and Sour Cream on the cheesy, albeit classy, corn chips.

Serve Quasi-Mexican Beans on the side, so your guests can make their own tasty burritos with the lettuce, tomato and left over cheese.
