Veal Schnitzel with Rocket, Pear & Parmesan Salad
- Veal Schnitzels
- Corn Flake crumbs
- Fresh Parsley
- Olive Oil
- Balsamic Glaze
Flatten Veal and coat with flour. In a separate bowl mix corn flake crumbs, salt & pepper and freshly chopped parsley. Dip the flour coated schnitzels in egg and then coat with the crumb mix. Heat pan with oil when hot place schnitzels in pan to cook. While they are cooking prepare the salad. Wash the rocket, peel the pear and the parmesan into ribbons and mix through the rocket throwing in a few walnuts, drizzle with olive oil.
Place cooked schnitzels on plate with the rocket salad, drizzle balsamic glaze over the top to serve. Enjoy!
